Also known as "shincha" or "new tea, " Rare Japanese spring-plucked teas such as this one are noted for their sweet, umami-rich flavor and exceptional quality.Its needle-like, pine-colored leaves yield a lightly cloudy gold-green infusion with aromas of broth, brine, raw almonds, roasted hazelnuts, steamed baby spinach and toasted nori. This gives them the oceanic, grassy flavor for which they are known, However, in a remote area of Shizuoka, Ashikubo Sencha is produced using a very traditional, but completely different, technique: it is wood-roasted. This processing method gives Ashikubo an extraordinary flavor that cannot be found in any other type of sencha.Broad, matte green leaves with a fruity, fir-like aroma produce a feather-light brew with scents of fruity, green extra virgin olive oil, fresh pinewood, green cornhusks and steamed corn. The flavor has an up-front, big and bold astringency with grainy notes of toasted barley and dried sweet maize. The glistening jade leaves of this rare tea handpicked, deep-steamed and air-shipped to us only once each year. However, what makes Fukamushi Sencha truly great (and one of our staff favorites) is its aroma and flavor.The spear-like leaves of Fukamushi Sencha herald foresty pine aromas that are shot through with a bright hint of citrus. The envy-green brew is a juxtaposition of thick, bold iodine minerality and marine notes with a gentle, underlying, buttery sweetness. Many Genmaichas taste overwhelmingly of toasted rice. Aside from the obvious graininess and perhaps some nuttiness, there isn't much to say about them. Our Genmaicha is different - it's a balanced blend of wide, flatly folded bancha leaves and deeply toasted (and, in some cases, popped) rice kernels.The aroma of the leaves goes beyond toasted grain to reveal a light, floral complexity. The brew offers up fragrances of steamed leeks, vegetable gyoza, sushi with avocado, wakame salad (minus the sour tones) and richly nutty scents.Its flavor is a unified front of steamed green tea and toasted brown rice, with no one ingredient overpowering the other. Tuo Cha Green Pu Er Vintage 2005 is an esoteric tea and an ideal gateway into the world of pu er teas. "Tuo cha" literally translates to "bird's nest" - the compressed leaves are named for their shape disc-like, rounded shape. Unlike our other pu ers, this tuo cha is "green" in color. Because of this, it has a lighter flavor than the rest.To brew, remove the densely packed leaves from the delicate beige paper that envelops it. Note the abundance of silvery buds. Brew in near-boiling water for up to seven minutes, starting with less time if you prefer a lighter taste. Note the delicate aroma of forest soil in the yellow-gold infusion. Sip, and savor the honey-like sweetness, subtle earthiness and notes of caramel and flowers.When you have finished your first infusion, reinfuse the leaves for slightly longer than before. As the leaves unfurl from their compressed state, they release deeper, earthier aromas.
