What is the Difference Between Green Tea, Black Tea and White Tea?

There are a number of different teas: white, green, black, rooibos and herbal. It can seem very overwhelming at times to keep them all straight and what their differences are. Today I'd like to talk about the difference between green tea, black tea and white tea. One of the most surprising things of all is that they come from the same tea bush, Camellia sinensis. Especially when you look at them:

It is all in the picking and processing of the leaves that make the difference. White tea is harvested from the very top of the tea bush early in the year. They only pick the top leaf and a bud. These tea leaves are then dried in the sun and that is it.

Green tea are tea leaves from the whole bush and they also undergo a step of being steamed or pan fired. Before being dried it is often rolled into different shapes depending on the type of green tea. For instance Jasmine tea is sometimes rolled into a pearl shape.

Black tea undergoes the most processing. Tea leaves from all over the bush are picked and then left in the sun to wilt. The tea leaves are then rolled allowing the tea leaves to ferment as they react with the air. The fermenting process turns the tea leaves black. They are then dried.

I really enjoyed the Green Tango. It is an organic green tea that is described as a Chinese Jade Wing green tea that is blended with South African green honeybush and tropical mangoes. A luscious blend that is smooth, fruity, and naturally sweet. I liked blend of peppermint and ginger that lingered on my tongue after drinking.

I highly recommend this mug. It is both beautiful and practical. I usually use mugs with handles, but I really like the smoothness of this mug and the double walled style means my hand is not overly hot when holding it.

Green Tea & Weight Loss

For the last several years, the buzz on the weight loss scene has been that drinking Green Tea can help you lose weight.  Is there any truth to this or is it just another hyped up weight loss claim?  I decided to do some investigating and share what I found.

The component in green tea that is believed to help with fat loss is called a catechin.  A study that was published in the Journal of Nutrition compared two groups of people.  One was given a daily beverage containing catechins and the other group got one without.  Both drinks had the same amount of caffeine.  They were also given an exercise regimen to follow.  They were studied for 12 weeks and at the end of the study it was found that the group that consumed the green tea catechins lost more abdominal fat than the other group.

While there are a large number of supplements that claim to contain green tea extracts, I am much more interested in drinking green tea itself.  There are so many good options out there from American Tea Room's Immortal Green to Teavana's Dragonwell.  Please let me know if you need any recommendations or help finding something specific.  Order some Green Tea today, your body will thank you.

How is Matcha Powder Made?

You may know matcha as the powdery green tea that is blended with hot water in order to make a refreshing & healthy cup of tea.  Have you ever wondered how matcha powder is made?  Well I did so I set out to do some research in order to find out.

Tea leaves that are going to become matcha powder must be specially prepared while they are still growing on the tea bush.  A few weeks before they are harvested they are covered so that they do not receive any sunlight.  This prevents the sun from reaching the leaves, which slows down the growth and makes the leaves darker and sweeter.

After the tea leaves are picked they are laid out flat to dry.  This causes the leaves to crumble. The stems and veins are removed and then the leaves are stone ground to create matcha powder.  This powder is then whisked into hot water to make matcha tea. I also enjoy matcha lattes where you add milk and sweetener.

American Tea Room’s Midori Sencha

Today I am sipping on American Tea Room's Midori Sencha, appropriately enough in my steep tea cup. Well perhaps not completely so because the cup shows a teabag, but I love it.  This blended tea is a lovely green loose tea flavored with melon and a number of flowers.  It is my first time trying it and I love it. The package mentions it is perfect hot or cold, which I've gotten to experience both this morning as it has taken me a while to finish my first cup 🙂

Perfect Water Temperatures for Brewing Tea

One of the most important components of brewing tea is water.  It is important to use a good source of water, preferably filtered. Equally important is the temperature of the water.  Different types of teas require different temperatures to get the best cup of tea.  Here is a guide to the perfect water temperatures for brewing tea.

  • Black Tea - You want to bring the water to a full rolling boil for black tea.  You want to steep black tea for 3 to 5 minutes.
  • Green Tea - This is the most delicate tea to brew.  You will get the best cup of tea if you bring the water to 160 degrees and steep for 2 to 4 minutes.
  • White Tea - A prized tea, it is a bit more robust than green tea.  You will get a great cup of tea if you bring the water to 180 degrees and steep for 4 to 6 minutes.
  • Oolong Tea - Bring the water to a 190 degrees and steep this tea for 5 to 8 minutes.
  • Rooibos Tea - This tea is very similar to black tea in that you want to bring the water to a full rolling boil and steep for 3 to 5 minutes.
